Product: Extra Virgin Olive Oil
Origin: 70+ year-old pastoral olive groves from the Ribatejo region of Portugal.
Harvest date: mid-October 2024.
Olive grove characteristics: Only from pastoral olive groves where trees are 6-8 metres apart, ensuring the promotion of biodiversity whilst also supporting the livelihoods of local farmers and shepherds. As opposed to the super-intensive monoculture method, whereby the grove must be ripped out and replanted every 12 years, these trees are planted and maintained to last the test of time.
Harvest method: Hybrid of manual and machine harvesting, ensuring the speedy delivery to the proximate mill within minutes of harvest.
Extraction method: Continuous system, two-phase (the olive paste is directly processed without the addition of water), cold extraction by mechanical means, and under high vacuum. High attention to detail at every stage of the process with the use of temperature sensors and vacuum-machinery to keep oxidation down to a minimum.
