The name reflects our commitment to transparency and integrity in sourcing and storytelling. We’re here to shine a light on the real, honest producers across Portugal.
The swallow is a powerful Portuguese symbol of home, return, and care. Every spring, swallows migrate back to the same place they nestled the year before – much like the producers we work with, who build slowly, return to their roots, and craft with purpose.
Olive Oil
Keep it away from light, heat, and air. Store in a cool, dark place with the cap tightly sealed.
Look for a recent harvest date (ideally <15 months old), UV-protected packaging, acidity <0.2%, and single-origin early harvest olives.
Best within 12–15 months of harvest. After that, flavour and health benefits begin to decline.
Sip it neat or with bread. Warm it slightly, inhale its aroma, and pay attention to bitterness, fruitiness, and the peppery kick – all signs of quality.
Our oil is unfiltered – what you see is the natural pulp and sediment of the fruit.
Cold temps cause olive oil to solidify or go cloudy. This is natural and reversible – just bring it back to room temperature.
UV protection is essential to preserve freshness and prevent oxidation.
It means all olives come from the same harvest, region, and mill – no blending or mixing from multiple sources.
We extract under vacuum at low temperatures (often just 24°C), protecting delicate flavour compounds and polyphenols that would otherwise be lost at higher temps.
Polyphenols are powerful antioxidants with anti-inflammatory benefits. They’re also responsible for the bitterness and peppery finish of high-quality oils.
Ask for lab tests. Ours is independently tested and currently contains 335mg/kg – far above the benchmark of 200mg/kg for high polyphenol oils.
It’s a marker of quality and freshness. While not directly tasted, low acidity signals careful harvesting, pressing, and storage.
It yields less oil, but with more flavour, vibrancy, and polyphenols. Varieties like Galega are particularly sensitive and benefit from early picking.
